I know some of you won’t believe that I came up with this Patriotic recipe all by myself — meaning those of you who know how much time I spend in the kitchen won’t believe I made this all by myself.
But I had to come up with something to represent my new novel MEANT TO BE, and what could be more patriotic than a beautiful red, white and blue cheesecake?
It is super quick and easy (has to be for me to make it), and will work perfectly for the upcoming Fourth of July holiday. So here goes….
Ingredients:
½ cup sugar
8 oz. tub of Cool Whip
8 oz. cream cheese
Graham cracker pie crust
Blueberries and Strawberries to layer and garnish
Sit the cream cheese out an hour or two to soften
Beat cream cheese with sugar
Add Cool Whip and beat again until creamy; set aside
Crumble ¾ of the pie crust into bottom of glass bowl
Add layer of blueberries
Add ¾ of cheesecake mixture
Sprinkle with remaining piecrust
Add remaining cheesecake mixture
Garnish with blueberries and strawberries
See what I mean? It’s truly delicious too!
